Cooking with Chris: Almond Crusted Pork with Onions and Sweet Potatoes


Here is one of my go-to recipes which is easy to make and delicious. I grabbed the original off AllRecipes.com and adapted it to fit my nutritional needs. (for instance, the original recipe included cheese, so I just didn't include it, and instead of flour coating on the pork chops, I chopped up almonds)  If you're having a holiday party, it might be a good recipe to tinker with!


Ingredients: (rough estimates, will depend on how much you're cooking)
  • 2 tablespoons olive oil or coconut oil
  • 1 egg
  • 2-4 pork chops
  • 1 cup chopped almonds (or any nut of your choosing)
  • sprinkle of salt, pepper
  • 4-6 sweet potatoes, sliced
  • 1-2 medium onions, sliced
  • 3 cubes beef bouillon
  • 3/4 cup hot water
  • 1 tablespoon lemon juice

slice the sweet potatoes and onion
 
dip each pork chop in egg and then coat with chopped nuts (the egg helps keep the coating on)

brown the pork chops for about 3 minutes each side

layer pork chops on bottom of pot, add sweet potatoes and onion on top. Sprinkle salt and pepper for taste. Heat up 3/4 cup water and dissolve beef bullion cubes. Pour over whole mixture with lemon juice. Cover and let simmer for 40-60 minutes.
